Ingredients

  • leek 2 (sliced)
  • garlic granules 1 tsp
  • Italian seasoning 2 tsp
  • pork sausages 4
  • plain flour 1 tbsp
  • chicken stock cube 1
  • tortellini 600 g
  • spinach 80 g
  • cream cheese 80 g
  • grated Parmesan 40 g (grated)

Method

Prep the ingredients

  • Thinly slice the leeks.

Cook the soup

  • Heat a dash of oil in a pan, then add the leeks with a pinch of salt and pepper,and cook over a medium heat for 4 minutes. Add the garlic granules and Italian seasoning.
  • Remove the sausage meat from the casings (discard the casings) and crumble the sausage meat into the pan. Cook until browned, around 5 minutes, breaking up the sausage with a back of a spoon as it cooks.
  • Scatter over the plain flour and cook it out for 2 minutes.
  • Make up the chicken stock cube with 200ml boiling water per serving (800ml for serves 4, 400ml for serves 2). Pour in the chicken stock and bring a simmer. Tip in the tortellini and cook for 4 minutes, adding the spinach halfway through the cooking time.
  • Stir in the cream cheese and half the Parmesan, mix well then take the pan off the heat.

Plate Up

  • Divide into bowls and scatter over the rest of the Parmesan. Tuck in and enjoy!
