Scrambled Paneer Curry - Paneer Burji

This is the easiest and most delicious paneer dish to make. If you’re going to try paneer for the first time, then this is the perfect recipe. It’s a great choice for packed lunches or picnics, too. My daughters like to cut a pitta in half, turn each half into a pocket and fill them with the paneer, then enjoy them with pickled onions and salad on the side. You could also eat this paneer in a wrap, along with sliced onions and chutney of your choice. You can use onions instead of shallots if you prefer. Ingredients

  • frozen peas 75 g
  • shallot 3 (chopped)
  • garlic cloves 4 (grated)
  • ginger 20 g (grated)
  • mixed chillies 1 (chopped)
  • tomatoes 2 (chopped)
  • paneer 200 g (grated)
  • fresh coriander 1 handful (chopped)
  • cumin seeds 1 tsp
  • mustard seeds 1 tsp
  • ground turmeric 1 tsp
  • garam masala 1 tsp
  • pitta 4

Method

Prep the ingredients

  • Soak the frozen peas in water. Drain before adding to the scambled paneer curry later on.
  • Peel and chop the shallots. Peel and grate the garlic and ginger. Chop the green chillies, tomatoes, and coriander.
  • Grate the paneer.

Cook the masala

  • Heat a dash of oil in a saucepan over a high heat. Add the cumin and mustard seeds. As soon as they start to sizzle, add the shallots and cook for 3 minutes. Add the garlic and ginger and cook for a minute.
  • Add the green chillies and tomatoes and cook for 2–3 minutes. Add the turmeric, add the drained frozen peas, season with salt to taste and cook 2-3 minutes.
  • Add the grated paneer and mix. Lower the heat, cover the pan with a lid and cook for 5 minutes.
  • Just before the end of the cooking time, sprinkle with the garam masala and coriander, mix well.

Plate up

  • Transfer the pan from the heat and leave to rest for 5 minutes. Heat the pitta as per the packet instructions.
  • Plate up - serve the paneer curry stuffed into the pittas and enjoy!
