Sweet Potato & Cabbage Sabzi

This is a beautiful side dish that uses humble ingredients and comes together in no time. Spiced with warming fennel, coriander and turmeric and chilli. Serve this alongside your favourite curry, fluffy rice or flatbreads.

Ingredients

  • sweet potato 500 g (diced)
  • sweetheart cabbage 910 g (chopped)
  • garlic cloves 10 (chopped)
  • lemon ½ (juice)
  • fennel seeds 1 tsp
  • chilli powder 1 tsp
  • ground turmeric 1 tsp
  • ground coriander 1 tsp

Method

  • Peel and dice the sweet potatoes. Take off the outer leaves and chop the cabbage. Peel and chop the garlic. Juice the lemon.
  • Heat a dash of oil in a large pan over a medium heat. Add the fennel seeds, cook for 30 seconds. Add the garlic and cook for 1 minute.
  • Add the sweet potatoes and cook for 3 minutes. Stir in the cabbage and mix well, cook for 2 minutes. Add the chilli powder, turmeric and coriander, season with salt to taste.
  • Cover the pan with a lid and cook for 5 - 8 minutes, stirring occasionally.
  • Add the lemon juice, remove from the heat and leave to rest for 5 minutes. Then plate up and enjoy.
