Quick & Easy Loaded Chicken & Rice Salad

Loaded chicken & rice when you’re craving deliciousness fast. Thanks to Veetee, there’s no fuss, and it’s so convenient to make. Just pop the rice in the microwave for 2 minutes, then toss it with shredded chicken, finely chopped spring onions, radish, coriander, sesame seeds, soy sauce and crispy chilli oil. Shake it all together, and you’re ready to eat. If you’re meal prepping this in advance, simply add all the other ingredients, then ping your rice when you are ready to eat! Perfect for easy meal prep or speedy weekday lunches and dinners, this recipe is also high in protein and fibre. Want to switch things up? Ingredients

  • cooked roast chicken breast 2 (shredded)
  • spring onions 4 (chopped)
  • cucumber ½ (diced)
  • radish 100 g (sliced)
  • fresh coriander 1 handful (chopped)
  • Veetee heat & eat basmati rice pots 500 g
  • sesame seeds 2 tbsp (toasted)
  • soy sauce 3 tbsp
  • crispy chilli oil 2 tbsp
  • sriracha 2 tbsp

Method

Prep the ingredients

  • Shred the cooked roast chicken breasts into small pieces.
  • Finely chop the spring onions. Deseed and dice the cucumber. Thinly slice the radish. Chop the fresh coriander.

Assemble the salad

  • Microwave the Veetee Heat & Eat Basmati Rice Pots according to pack instructions (usually 2 minutes).
  • Add the basmati rice, chicken, spring onions, cucumber, radish and coriander to a bowl or jar.
  • Add the sesame seeds, soy sauce, crispy chilli oil and sriracha. Pop a lid on top and give it a proper shake.
  • Taste and adjust the seasoning to taste with salt and pepper, depending on how you like it.

Plate Up

  • Plate up and tuck in!
