Pork & Black Bean Noodle Stir-Fry

Try our spin on a stir-fry using pork mince and an easy black bean sauce that is packed full of fresh vegetables. This is an aromatic one pan meal that's easy to prepare and ready in 30 minutes. Remember, you can add more soy sauce and Chinese 5 Spice to taste, season it to how you like it!

Ingredients

  • red onion 1 (sliced)
  • bell pepper 1 (sliced)
  • garlic cloves 2 (crushed)
  • spring onions 2 (sliced)
  • pork mince 500 g
  • soy sauce 2 tbsp
  • Chinese 5 spice 2 tsp
  • black bean sauce 60 g
  • dried noodles 300 g

Method

Prep the ingredients

  • Thinly slice the red onion. Deseed and slice the bell pepper. Crush the garlic cloves. Thinly slice the spring onions.

Cook the dish

  • Heat a dash of oil in a large frying pan on a medium-high heat. Add the pork mince and cook for around 5 - 6 minutes, stirring well so that it doesn’t stick and burn. Transfer the pork mince from the pan and set aside until step 4.
  • In the same pan, heat another dash of oil then add the red onion and bell pepper. Cook for a few minutes until the vegetables start to soften, stirring frequently. Add the garlic and fry for a minute.
  • Stir the mince back into the pan. Add the Chinese 5 Spice, soy sauce and black bean sauce and mix well. Cook for 1 minute, then stir in the black beans, along with a dash of water. Mix well, and leave to simmer.

Cook the noodles

  • Meanwhile, cook the noodles according to the packet instructions.

Plate up

  • Plate up - sprinkle the spring onions on top of the pork & black bean noodles and enjoy!
