Pollo Picante Pasta - Spicy Chicken Pasta

Ingredients

  • chicken thighs 500 g (diced)
  • red onion 1 (diced)
  • double cream 300 ml
  • cherry tomatoes 150 g (halved)
  • spinach 100 g
  • fusilli pasta 300 g
  • harissa paste 1 tbsp
  • paprika 1 tbsp
  • grated Parmesan to garnish (grated)

Method

Method

  • Peel and dice the red onion, halve the cherry tomatoes and dice the chicken.
  • Cook the pasta according to the packet instructions. Drain when cooked.
  • Heat a glug of oil in a large frying pan on a medium heat. Add the onions and fry for 5-6 minutes until they start to soften.
  • Add the chicken and brown for 5-6 minutes. Stir in the harissa paste and paprika and fry for a minute or two.
  • Add the cherry tomatoes, double cream and season to taste with salt and pepper. Leave to gently simmer for 5 minutes.
  • Stir in the spinach and cook until it wilts then tip in the drained pasta.
  • Plate up and finish with the grated Parmesan. Enjoy!
