One Pan Tofu Fajitas

This one pan tofu fajitas recipe is the perfect way to make a delicious and easy family meal. Crumbling the tofu and roasting it in the oven with spices adds maximum flavour.

Ingredients

  • firm tofu 400 g (crumbled)
  • bell pepper 1 (sliced)
  • red onion 1 (sliced)
  • black beans 400 g (drained)
  • garlic granules ½ tsp
  • chilli flakes pinch
  • cayenne pepper ½ tsp
  • ground coriander 1 tsp
  • paprika 1 tbsp
  • tamari 2 tbsp
  • olive oil 1 tbsp
  • lime 1 (juice)
  • avocado 1 ½ (sliced)
  • fresh coriander 1 handful (chopped)
  • gluten free tortilla 320 g
  • salsa 200 g

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6. Drain the tofu as per the packet instructions. Slice the bell pepper and red onion and transfer to a bowl.
  • Make the tofu fajita mix: Crumble the tofu onto a large baking tray. Add the black beans, garlic granules, chilli flakes, cayenne pepper, ground coriander, paprika, tamari, olive oil and lime juice. Add a pinch of salt and pepper and toss well together.
  • Bake for 30 minutes. Stirring halfway through.
  • Meanwhile, slice the avocado. Roughly chop the coriander leaves and stalks. Heat the tortillas according to the packet instructions.
  • Remove the tray from the oven. Scatter the coriander on top of the tofu fajita mix. Serve with the tortillas, salsa and avocado. Enjoy!
