One Pan Smashed Pesto Lasagne

Have you tried smashing your lasagne sheets? Breaking them up into smaller pieces mean they cook more quickly, perfect for this one pan lasagne. A creamy pesto filling is finished with mozzarella and cheddar then popped under the grill until golden and bubbling. Perfect for an easy midweek dinner. If you prefer, you can also make this with fresh lasagne sheets, or swap the beef mince for chicken.

Ingredients

  • onion 1 (chopped)
  • beef mince 500 g
  • garlic granules 2 tsp
  • chicken stock cube 1
  • cream cheese 150 g
  • green pesto 100 g
  • lasagne sheets 150 g
  • spinach 100 g
  • mozzarella cheese ball 125 g (torn)
  • grated cheddar cheese 50 g (grated)

Method

  • Peel and chop the onion.
  • Heat a dash of oil in a large ovenproof frying pan, or casserole dish, on a medium heat. Add the onion and garlic granules to the pan and cook for 5 minutes.
  • Stir in the mince and cook for another 5 - 7 minutes until it starts to brown a little, breaking it up with the back of a spoon as it cooks.
  • Make up the chicken stock cube with 500ml boiling water. Pour the stock into the pan along with the cream cheese and pesto and mix well.
  • Snap the lasagne sheets into smaller pieces directly into the pan (break each piece into around 4 or 5 pieces).
  • Stir well to avoid the lasagne sheets sticking together. Add the spinach and mix well again. Pop a lid on and cook for 6 - 8 minutes.
  • Heat the grill to high.
  • Drain and tear the mozzarella into chunks. Scatter the mozzarella on top of the lasagne along with the cheddar. Pop under the grill for 5 -7 minutes until golden and bubbling.
  • Plate up and enjoy!
