One Pan Bacon & Tomato Spaghetti

Part of our Easy Pasta Dinner series, this is the upgrade your weeknight spaghetti has been looking for! Smoky bacon lardons and burst tomatoes combine to create the easiest one pan spaghetti dish. You could swap the pasta shape for your preferred one.

Ingredients

  • smoked bacon lardons 200 g
  • garlic cloves 2 (sliced)
  • vegetable stock cube 1
  • cherry tomatoes 400 g
  • spaghetti 250 g
  • spinach 100 g
  • grated Parmesan 50 g

Method

  • Heat a wide casserole or frying pan on a medium heat (it needs to be big enough to fit all the pasta). Add the bacon lardons and cook for 2 minutes, until they start to brown.
  • Meanwhile, peel and thinly slice the garlic. Add the garlic and cook for 1 minute.
  • Make up the vegetable stock cube with 200ml boiling water per serving.
  • Add the spaghetti to the pan. Depending on the size of your pan you may need to break the spaghetti a little to fit. Add the tomatoes, then stir well and simmer for 10 minutes, stirring occasionally.
  • When the pasta is nearly cooked, add the spinach to the pan. Cook for 4 minutes, until the tomatoes start to burst. Check the seasoning and adjust to how you like it.
  • Scatter with the Parmesan and plate up. Enjoy!
