Marry Me Buffalo Chicken Traybake

Pure cosy comfort. A special Dr. Will’s spin on the viral Marry Me Trend, that’s coming in with a delicious Buffalo Hot Sauce twist available at Tesco. Just when you thought the Marry Me trend couldn’t get anymore delicious, meet your new comfort food crush. Triple the drizzle - triple the flavour. We’re using Dr. Will’s Buffalo Hot Sauce to firstly marinate our chicken for a tangy, spicy kick resulting in the juiciest chicken, which is then cooked in the Marry Me Sauce, which of course has a generous drizzle of the Buffalo Hot Sauce too. For a lighter alternative using crème fraîche in the sauce adds a lovely tangy kick. It’s all cooked in one tray for an effortless dinner, simply stir, bake and you’re done. Packed with greens and pasta to soak up all the delicious Marry Me Buffalo sauce. Add more Buffalo Hot Sauce depending on how spicy you like it, it’s up to you!

Ingredients

  • diced chicken breast 400 g (diced)
  • Dr. Will's buffalo hot sauce 4 tbsp
  • red onion 1 (chopped)
  • sundried tomatoes 80 g (chopped)
  • spinach 1 handful (chopped)
  • conchiglie pasta shells 300 g
  • chicken stock cube 1
  • garlic granules 2 tsp
  • tomato purée 1 tbsp
  • dried oregano 2 tsp
  • chilli flakes pinch
  • crème fraîche 150 g
  • grated Parmesan 70 g (grated)
  • fresh basil 1 handful (leaves picked)

Method

Preheat the oven & prep the ingredients

  • Preheat the oven to 200°C/180°C fan.
  • In a bowl mix together the diced chicken breast and 2 tbsp Dr. Will’s Buffalo Hot Sauce, set aside to marinate.
  • Chop the red onion, sundried tomatoes and spinach.

Assemble & cook the bake

  • Add the chicken, conchiglie pasta shells, red onion and sundried tomatoes to a large baking dish.
  • In a jug or bowl, make up the chicken stock cube with 200ml boiling water per serving (800ml for serves 4, 400ml for serves 2).
  • Stir in the garlic granules, tomato purée, dried oregano and optional chilli flakes, season with salt and pepper.
  • Pour over the pasta and mix well. Bake for 30 minutes, stirring halfway through.
  • After 30 minutes, add the reserved Dr. Will’s Buffalo Hot Sauce, crème fraîche and spinach. Scatter over the grated Parmesan.
  • Pop back in the oven for another 10 - 12 minutes.

Plate Up

  • Transfer the baking dish from the oven, leave to stand for a few minutes, then scatter over the basil leaves and plate up.
  • Finish with an extra drizzle of Dr. Will's Buffalo Hot Sauce if you like. Tuck in and enjoy!
