Ingredients

  • red onion ½ (diced)
  • bell pepper 1 (diced)
  • mushrooms 150 g
  • firm tofu 200 g (crumbled)
  • olive oil 1 tbsp
  • tamari 2 tbsp
  • fajita seasoning 2 tbsp
  • guacamole to serve
  • grated vegan cheese 200 g
  • gluten free tortilla chips 1
  • salsa 100 g

Method

  • Preheat the oven to 180°C fan/200°C.
  • Dice the red onion and chop the bell pepper and mushrooms.
  • With your hands crumble up the tofu. Add the tofu to a large mixing bowl with the olive oil, tamari and fajita seasoning.
  • Scatter the chopped vegetables and tofu onto a tray and bake in the oven for 15 minutes.
  • Then scatter on the tortilla chips and top with the grated cheese before baking for a further 10 minutes. Serve directly on the table for everyone to help themselves with the guacamole and salsa, enjoy!
