Ingredients

  • red onion 1 (sliced)
  • bell pepper 1 (sliced)
  • broccoli 1 (chopped)
  • chicken thighs 420 g (sliced)
  • honey 5 tbsp
  • hot sauce 3 tbsp
  • straight to wok noodles 600 g

Method

Prep the ingredients

  • Thinly slice the red onion and bell pepper. Slice the broccoli into florets. You can chop the stalk into bite sized pieces and use them too. Slice the chicken thighs into bite sized pieces.

Make the hot honey sauce

  • In a frying pan heat the honey on a low heat until it starts to gently bubble then pour in the hot sauce. You can add an optional pinch of chilli flakes too if you like it extra hot! Stir well until combined and season with a pinch of salt then transfer the sauce to a small bowl. Please note - if you prefer a saucier dish just make more of the sauce.

Cook the chicken & vegetables

  • Heat a dash of oil in the same pan on a medium heat (wipe the pan out if any sauce is stuck on it). When the pan is hot add the chicken and cook for 5 - 7 minutes, stirring occasionally, until golden brown. Transfer the chicken from the pan while you cook the vegetables.
  • Stir in the red onion, bell pepper and broccoli and cook for a few minutes, until just tender but they still have a bite to them. Add another dash of oil to the pan if needed. Pop the chicken back in the pan.

Add the noodles & sauce

  • Stir in the noodles and a dash of water then cook until heated through. Pour in the hot honey sauce and toss the chicken, vegetables and noodles together. Check the seasoning and adjust it to how you like it.

Plate Up

  • You can scatter with some optional fresh coriander on top if you like. Plate up and enjoy!
