Honey & Soy Chicken Traybake

My top tip for cooking juicy chicken breasts every time is giving them a hard sear in the pan first, coated in salt, pepper and cornflour. This locks in the moisture and lowers the roasting time to the same as the vegetables. It also allows you to add flavour at the pan searing stage, the cornflour will take on additional spices and once roasted- any sauce you like sticks to it like a big welcoming hug. An easy traybake that's on repeat in my house, I hope you love it as much as my family does. (if you're using regular broccoli instead of Tenderstem broccoli, you may need to cook it in boiling water a few minutes beforehand).

Ingredients

  • chicken breast 4
  • cornflour 2 tbsp
  • garlic cloves 2 (crushed)
  • honey 3 tbsp
  • soy sauce 4 tbsp
  • broccoli 330 g (chopped)
  • baby corn 130 g
  • basmati microwave rice 500 g

Method

Prep & cook the chicken breasts

  • In a medium sized bowl, mix the cornflour with a pinch of salt and pepper. Coat the chicken breasts in the cornflour mix.
  • Heat a dash of oil in a frying pan over a medium heat (if possible use a pan that’s ovenproof). Fry the chicken on each side for 5 minutes until both sides are golden brown.

Make the sauce & preheat the oven

  • Preheat the oven to 180°C.
  • Peel and crush the garlic. Add the honey, soy sauce, garlic and 2 tbsp water per serving to the pan, whisk to mix and coat your chicken in the sauce.
  • If your pan is ovenproof, pop the pan in the oven and bake the chicken for 10 minutes. Alternatively you can transfer the chicken to a baking tray.

Prep the rice & veg

  • Trim and chop the broccoli(you can use tenderstem broccoli if you prefer), then add the broccoli and baby corn to the chicken and bake for another 10 minutes. If you like you can drizzle over some additional honey and soy sauce at this point, for extra flavour.
  • When the dish is nearly ready, cook the rice according to the packet instructions.

Plate up

  • Check that the chicken has reached an internal temperature of 77°C, or is cooked through fully.
  • Plate up the chicken and vegetables with the rice, then tuck in and enjoy!
