Honey Gochujang Beef & Sticky Rice

Gochujang is a sweet, and spicy fermented Korean chili paste. We’ve paired this with lime-pickled red onion and cucumber on the side, that’s perfect to cut through the rich beef. Ingredients

  • beef mince 500 g
  • smoked paprika 1 tsp
  • garlic granules 1 tsp
  • gochujang 2 tbsp
  • honey 1 tbsp
  • red onion 1 (sliced)
  • cucumber ½ (sliced)
  • lime 1 (juice)
  • Veetee heat & eat sticky rice pots 500 g
  • red chillies 1 (sliced)

Method

Cook the honey gochujang beef

  • Heat a dash of oil in a frying pan over a medium heat. Add the beef mince to the pan with the smoked paprika and garlic granules, and cook until starting to brown, around 5 - 7 minutes, breaking it up with the back of a spoon as it cooks. Season with a pinch of salt.
  • Add the gochujangcook for 2 minutes to coat the beef. Stir in 150ml warm water and mix really well. You can add more or less gochujang depending on how spicy you would like it. Add the honey then simmer for 3 - 4 minutes, adding another splash of water if needed.
  • Check the seasoning and adjust to taste.

Prep the lime-pickled veg

  • Thinly slice the red onion and cucumber. Juice the lime.
  • Sprinkle over the lime juice and add a pinch of salt, then massage the lime juice into the red onion and cucumber.

Cook the Veetee Sticky Rice

  • Cook the Veetee Sticky Rice in the microwave according to the packet instructions, usually 2 minutes. Once cooked, fluff it up with a fork.

Plate Up

  • Plate up the Veetee Sticky Rice with the beef, lime-pickled veg and the optional fresh red chilli if you are using it.
