Green Goddess Gnocchi

This super speedy dish is perfect to incorporate extra veggies into your diet. You could swap the spinach for kale, spring greens or cavolo nero. I'm using gnocchi for speed but you could use your preferred pasta too. To keep this veggie make sure you use a veggie alternative to the Parmesan or similar hard cheese. Please note, you need a blender to make this recipe.

Ingredients

  • spinach 200 g
  • garlic cloves 4 (peeled)
  • gnocchi 800 g
  • lemon 1 (juice)
  • grated Parmesan 60 g
  • nutmeg pinch (grated)

Method

  • Peel the garlic cloves. Add the spinach and garlic to a pan of boiling salted water. Cook for 5 minutes.
  • Meanwhile, juice the lemon. Grate the Parmesan unless it is already grated.
  • Drain the spinach and garlic, keeping back a couple of tablespoons of the cooking water per serving.
  • Add the spinach, most of the Parmesan (reserve some to garnish) and lemon juice to a blender, along with the reserved cooking water. Blitz until smooth. Adjust the seasoning to how you like it.
  • You can either cook the gnocchi in a pan of boiling salted water, according to the packet instructions or fry it in a pan for a few minutes until golden, with a dash of oil.
  • Pour the green sauce into a wide frying pan, stir in the cooked gnocchi and heat through. I love to season it with some grated nutmeg. Finish with the reserved Parmesan. Plate up and enjoy!
