Grab & Go Sweet & Sour Chicken

Chicken pieces coated in a sticky, tangy sweet & sour sauce with juicy peppers and pineapple. It’s your favourite takeaway, but homemade, using simple cupboard essentials. Just tip it in a pan and stir-fry your way to fakeaway glory, served with fluffy rice on the side. Part of our Grab & Go recipe series, delicious dinners that you can prep ahead and store in the fridge or freezer until you need them. Then dump, cook, stir and enjoy.

Ingredients

  • bell pepper 2 (chopped)
  • onion 1 (chopped)
  • pineapple in juice 200 g (drained)
  • chicken thighs 600 g
  • ketchup 3 tbsp
  • honey 2 tbsp
  • soy sauce 2 tbsp
  • basmati rice 240 g
  • sesame seeds to serve

Method

Prep & bag the ingredients

  • Dice the bell pepper and onion. Drain the pineapple, and chop into bite size pieces. Chop the chicken thighs into bite size pieces.
  • Add the bell pepper, onion, pineapple, chicken thighs, ketchup, honey, and soy sauce to a freezer bag. Shake to cover all ingredients and add some salt (keep in mind that soy sauce adds the saltiness) and pepper if you like too.
  • Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.

Cook the dish

  • When you're ready to cook the dish: Heat a dash of oil in a large frying pan over a medium heat. Add the bag ingredients and cook for 12-15 minutes until the chicken is cooked through and the glaze is sticky and glossy. If you like you can sprinkle over a little cornflour to thicken the glaze.
  • While the chicken is cooking, cook the rice according to the packet instructions.

Plate Up

  • Serve the basmati rice with the Sweet & Sour Chicken, sprinkle with some sesame seeds and enjoy!
