Quick & Easy Fish Finger Tacos

Crispy golden fish fingers, with an easy peasy salsa and a herby sauce. Ready in under 30 minutes and oh so delicious.

Ingredients

  • fish fingers 8
  • red onion 1 (chopped)
  • cherry tomatoes 200 g (chopped)
  • cucumber ½ (chopped)
  • natural yoghurt 100 g
  • lime 1 (juice)
  • fresh coriander 1 handful
  • plain tortilla wraps 8

Method

Preheat the oven and bake the fish fingers

  • Preheat the oven to 200°C/180°C fan. Pop the fish fingers on a baking tray and bake in the oven for 12 - 15 minutes, turning halfway through.

Prep the salsa

  • Finely chop the red onion, tomatoes and cucumber and mix together in a bowl. Season to taste with lime juice and a pinch of salt and pepper.

Make the herby sauce

  • In a blender blitz together most of the coriander (keep some leaves whole to serve) and yoghurt. Season to taste with lime juice and salt and pepper. If you prefer, you can finely chop the coriander leaves and mix with the yoghurt instead of using a blender.

It's taco time!

  • Warm the wraps according to the packet instructions. Build your tacos however you like them. We love a dollop of sauce then slice the fish fingers in half and pile them on, scattered with some salsa and some coriander leaves. Enjoy!
