Fiery Gochujang Sausage Pasta

A super speedy and easy dinner for the whole family. Brimming with flavour from fiery gochujang, garlic and umami -rich soy sauce. Breadcrumbs add a nice crunchy texture and chives help cut through the richness of the sausage meat. Gochujang is a Korean red chilli paste - you can add more or less depending on how spicy you like it.

Ingredients

  • spaghetti 300 g
  • onion 1 (diced)
  • fresh chives 2 tbsp (chopped)
  • pork sausages 400 g
  • garlic paste 1 tsp
  • gochujang 1 tbsp
  • tomato purée 1 tbsp
  • soy sauce 1 tbsp
  • breadcrumbs 30 g (toasted)

Method

Cook the pasta & prep the ingredients

  • Cook the pasta according to the packet instructions. Reserve some pasta water to use in step 5 to loosen the sauce.
  • Peel and finely dice the onion. Chop the chives. Remove the skin from the sausages and break the meat into bite size pieces.

Toast the breadcrumbs

  • Heat a large frying pan over a medium heat. Add the breadcrumbs and gently toast for 2-3 minutes. Remove the breadcrumbs and use the same pan to cook the rest of the dish.

Cook the sauce

  • Heat a dash of oil in the frying pan over a medium heat. Add the sausage pieces and fry for 2-3 minutes, add the onion and garlic paste and cook for another 2 minutes.
  • Add the gochujang, tomato puree, soy sauce and a splash of the pasta water to loosen the sauce.
  • Add the pasta to the pan and combine with the sausage sauce. You may want to use a bit more pasta water to reach the desired consistency for the sauce. Check the seasoning and adjust to taste.

Plate Up

  • Plate up the dish and top with the toasted breadcrumbs and fresh chives. Enjoy!
