Feta & Pea, Lemon Pasta

This is a delicious and refreshing pasta dish. It's made with a flavorful combination of feta cheese, peas, mint, and lemon, which come together to create a dish that is bursting with fresh and tangy flavors.

Ingredients

  • fusilli pasta 300 g
  • green olives 70 g (drained)
  • frozen peas 200 g
  • fresh mint 1 handful (leaves picked)
  • lemon 1 (juice)
  • feta 200 g (crumbled)
  • olive oil 1 tsp
  • spinach 2 handful (torn)

Method

  • Cook the pasta in a large pan of boiling water, according to the packet instructions. 1 minute before the pasta is cooked, add the peas. Return to the boil and cook for 1 minute.
  • While the pasta cooks, zest and juice the lemon. Tear any larger spinach leaves in half. Pick the mint leaves.
  • Drain the pasta and peas, making sure you retain about 2-3 tbsp of the pasta cooking water in the pan.
  • Cook the spinach in the same pan for a couple of minutes, until wilted. Return the pasta and peas to the pan.
  • Add a good glug of olive oil, the lemon juice and zest and mint leaves, and toss to combine. Stir in the olives. Season to taste with salt and pepper. Crumble the feta on top and serve. Enjoy!
