Favourite Chocolate Brownies

Indulgent fudgy brownies with extra gooey marshmallows and rich chocolate chips will be a hit with the whole family. You can be really flexible with this recipe and add all sorts of treats into the brownie mixture before baking, depending on what you fancy or have in your kitchen.

Ingredients

  • unsalted butter 200 g
  • mini marshmallows 2 handful
  • plain flour 125 g
  • sugar 300 g
  • egg 3 (beaten)
  • chocolate chips 250 g
  • dark chocolate 200 g (chopped)

Method

  • Preheat the oven to 180°C/160°C fan/gas mark 4. Line an approximately 20x30cm rectangular, 3-4cm deep baking tin with non-stick baking paper.
  • Chop the chocolate and place with the butter in a bowl over a pan of barely simmering water and leave to gently melt. Stir the chocolate as little as possible, alternatively gently melt in the microwave.
  • In a separate bowl, mix together the eggs and sugar with an equal amount of hot water.Whisk until this is lovely and thick and creamy, but you still feel the gritty granules of sugar.
  • Stir the melted chocolate and butter into the egg mixture. Sift in the flour and a pinch of salt. Fold the chocolate chips and mini-marshmallows into the mixture.
  • Pour into the baking tin and cook for 25 minutes until the top is cracking and the centre is just set. Leave to cool in the tin for about 30 minutes before cutting into squares.
