Easy Chicken & Pepper Quesadillas

Who doesn’t love a quesadilla? They are so handy to whip up and the filling can be whatever you fancy, meat, veg, fish, leftovers, you name it! It is basically a delicious circular cheese toastie - perfect for a speedy lunch or dinner.

Ingredients

  • bell pepper 1 (sliced)
  • red onion 1 (sliced)
  • garlic cloves 2 (sliced)
  • chicken breast 1 (sliced)
  • chipotle paste 1 tsp
  • plain tortilla wraps 4
  • grated mozzarella 100 g (grated)
  • natural yoghurt 2 tbsp

Method

Prepare the filling

  • Slice the bell pepper and red onion. Thinly slice the garlic cloves and chicken breast.
  • Start by frying the sliced bell pepper and red onion in a frying pan over a really high heat in a little oil so you get a really nice char on the veg!
  • Now add in thinly sliced chicken and garlic and fry for 4-5 minutes until the chicken is cooked through, then add in your chipotle paste and have a quick taste. Season to taste.

Assemble & cook the quesadillas

  • In a frying pan pop in a plain tortilla wrap, some grated mozzarella, veg filling, more mozzarella on top of the wrap.
  • Gently heat the quesadilla, toasting on both sides until the cheese has melted and the wraps or crispy.

Plate Up

  • I like to serve mine with a dollop of yoghurt or you could also use sour cream!
