Easy Asian Style Fish Parcels

These Easy Asian-Style Fish Parcels are a weeknight winner, tender white fish and crisp veggies - mangetout and baby corn, all wrapped in baking paper with fragrant ginger, garlic, sesame and soy sauce. Steam-cooked in their own juices, the parcels lock in flavour and keep the fish perfectly moist, making for a fuss-free, healthy dinner. Serve with microwave rice for a speedy, restaurant-style meal at home, with minimal washing up. If you are cooking for a large number you may find it easier to add the fish to a baking dish and cover it with tinfoil instead.

Ingredients

  • garlic cloves 2 (grated)
  • ginger 15 g (grated)
  • lime 2 (zest & juice)
  • soy sauce 2 tbsp
  • sesame oil 3 tbsp
  • honey 2 tsp
  • frozen cod fillets 4 ½
  • baby corn & mangetout 400 g
  • basmati microwave rice 500 g

Method

Prep & cook the parcels

  • Preheat the oven to 200C/180C fan.
  • Peel and grate the garlic cloves and fresh ginger. Juice half the lime and cut the rest into slices.
  • In a bowl mix together the ginger. garlic, lime juice, soy sauce, sesame oil and honey.
  • Lay out a sheet of baking paper, vertically up, for each piece of cod. Arrange the baby corn & mangetout in a rectangle that's roughly a bit bigger than the cod. Put the cod on top then drizzle over the dressing. Pop a lime slice** on top of the fish.
  • Fold the top half of the baking paper over the cod, then fold/crimp together the edges of the baking paper to create sealed parcels, making sure the edges are sealed so no steam escapes. Repeat until all the cod is assembled.
  • Place the parcels on a baking tray and bake for 15 - 20 minutes, depending on the size of your cod. The fish should be just cooked and flake easily.

Cook the rice

  • When you're nearly ready to eat, microwave the basmati microwave rice according to the packet instructions.

Plate Up

  • Gently open the parcels and plate up the fish with the rice and serve with the lime slices. Tuck in and enjoy.
