Sausage, Bacon & Egg Tostadas with Avocado & Lime

Combining our favourite trends - smashed burgers made into tacos! A bold summer twist on a classic tostada, layered with smashed Finnebrogue Naked Pork Sausages and crispy Finnebrogue Naked Back Bacon for maximum savoury impact. Built on a crisp tortilla base, this dish delivers crunch and spice in every bite. Topped with an egg cooked just how you like it, then add avocados, cherry tomatoes and zingy lime. Optional hot sauce to taste. Breakfast for dinner or dinner for breakfast? It's up to you!

Ingredients

  • avocado 2 (chopped)
  • cherry tomatoes 200 g (chopped)
  • lime 2 (wedges)
  • Finnebrogue unsmoked back bacon 200 g
  • Finnebrogue pork sausages 400 g
  • soft taco wraps 8
  • egg 4 (fried)
  • hot sauce 2 tbsp

Method

Prep the avocado & tomatoes

  • Chop the avocado and cherry tomatoes and mix together with a pinch of salt and pepper.
  • Cut the lime into wedges and use half to season the avocado and cherry tomatoes to taste with lime juice.

Cook the bacon

  • Heat a large frying pan over a medium heat and cook the Finnebrogue unsmoked back bacon for 5–6 minutes until crispy and golden.
  • Alternatively you can grill or air fry the bacon while you cook the sausages in the next step.

Cook the tostadas

  • Squeeze the sausage meat from the Finnebrogue Pork Sausages (discarding the casings).
  • Divide the sausage meat between the tacos, spreading it thinly onto each one, leaving a small gap around the edges.
  • Heat a dash of oil in the pan you cooked the bacon in over a medium heat.
  • Add the tacos sausage meat-side down and cook for 3 - 4 minutes, until the sausage meat is golden.
  • Flip it over and cook on the other side for 1 minute. Repeat until all are cooked.

Fry the eggs

  • Fry the eggs according to how you like them.

Build the tostadas & Plate Up

  • Top each tostada with the bacon, egg, avocado and cherry tomatoes.
  • Serve with the lime wedges, plus your favourite hot sauce drizzled on top.
