Easy Spaghetti Bolognese

Ingredients

  • onion 1 (chopped)
  • garlic cloves 2 (crushed)
  • carrot 2 (chopped)
  • celery 2 (chopped)
  • beef mince 500 g (minced)
  • tomato purée 2 tbsp
  • chopped tomatoes 400 g
  • beef stock cube 2
  • spaghetti 300 g
  • grated Parmesan 50 g (grated)
  • dried oregano 1 tbsp

Method

  • Finely chop the onions, carrots and celery. Crush the garlic.
  • Heat a dash of oil in a large saucepan over a medium-high heat. Add the onion, garlic, carrots and celery, along with a pinch of salt and cook for 5 minutes, stirring occasionally, until softened.
  • Add the beef and cook for a further 5 minutes, stirring to break up any lumps, until the meat is browned. If needed you can do this in batches to make sure the beef browns and doesn't steam. This is how you get lots of flavour into your bolognese!
  • Stir in the tomato purée and cook for 1 minute. Add the chopped tomatoes, beef stock cube(s), half the dried oregano and season with salt and pepper. Bring to the boil, reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  • Meanwhile, cook the spaghetti according to the packet instructions.
  • Serve the spaghetti with the bolognese sauce and sprinkle with the rest of the dried oregano and grated Parmesan cheese. Enjoy!
