Classic Beef Lasagne

A classic lasagne is a great recipe staple to have. Packed full of layers of a rich tomato sauce, pasta and cheese, this is oh so delicious.

Ingredients

  • beef mince 500 g (minced)
  • onion 1 (diced)
  • carrot 1 (diced)
  • celery 1 (diced)
  • garlic cloves 2 (crushed)
  • tomato purée 1 tbsp
  • beef stock cube 1
  • chopped tomatoes 400 g (chopped)
  • dried oregano 1 tbsp
  • unsalted butter 50 g
  • plain flour 50 g
  • milk 500 ml
  • lasagne sheets ½
  • grated cheddar cheese 150 g
  • mixed leaf salad 120 g

Method

  • Preheat the oven to 180°C/160°C fan/gas mark 4.
  • Finely dice the onion, carrot and celery. Crush the garlic. Make up the beef stock cube with 100ml boiling water per person.
  • Heat a splash of olive oil in a large pan on a medium heat. Gently fry the onion, carrot celery and garlic for around 5 minutes or until starting to soften. Add the beef mince and fry for 5 minutes until cooked trough.
  • Stir in the stock, tomato puree, chopped tomatoes and oregano. Bring to the boil, then reduce the heat and simmer gently for 10 minutes. Season to taste with salt, pepper and a pinch of sugar.
  • Meanwhile, make the white sauce. Melt the butter in a pan over a medium heat. Whisk in the flour and cook for 2 minutes whilst stirring. Gradually pour in the milk, whisking all the time to prevent lumps. Continue whisking until it comes to a boil, reduce the heat and simmer for 5 minutes, stirring occasionally. Season with salt and pepper.
  • Assemble the lasagne in an ovenproof dish measuring approx. 24cm x 18cm. Start by adding a layer of the lasagne sheets, snapping them to fit the dish if needed. Then add a layer of beef sauce then white sauce and a scattering of the grated cheddar. Repeat twice more until all the beef sauce is used up. Finish with a layer of white sauce and the rest of the cheese. Bake in the oven for 35 - 40 minutes, until golden and bubbling.
  • Leave to stand for a few minutes before plating up. Serve with the mixed leaf salad and enjoy!
