Chicken Caesar Salad

Who doesn’t love a Chicken Caesar?! It’s so versatile just take out the chicken and have it with fish or just a plain banging salad. It's one of my favourite salads, I hope you love this version, which has miso paste for a delicious boost of umami. The miso adds salt so always taste before adding more.

Ingredients

  • chicken thighs 600 g
  • garlic cloves 2 (grated)
  • mayonnaise 4 tbsp
  • grated Parmesan 120 g (grated)
  • anchovies in oil 2
  • miso paste 2 tsp
  • bacon 6
  • croutons 100 g
  • Romaine lettuce 160 (chopped)

Method

Cook the chicken

  • Preheat the oven to 200C/180C fan.
  • Season your chicken thighs with salt. Heat a dash of oil in an ovenproof pan, cook for 2 - 3 minutes, then pop the pan into the oven for 15 - 17 minutes, until the chicken is cooked through. Chop into bite-sized pieces.

Make the dressing

  • While the chicken is cooking make the dressing. Grate the garlic cloves.
  • To a large bowl add the mayonnaise, garlic, 2/3 of the Parmesan, half the anchovies and miso paste, then give it a really good mix.
  • Add a good twist of black pepper and a little splash of water to make the dressing a touch thinner to how you like it.

Cook the bacon

  • Cook your bacon however you fancy, i like mine crispy.

Plate Up

  • Chop the Romaine lettuce.
  • Add the lettuce, chicken, bacon, remaining anchovies to a large bowl, pour over the dressing and toss together. Finish with the croutons and rest of the Parmesan. Tuck in and enjoy!
