Air Fryer Chicken & Hummus Couscous Bowl

This meal comes together in no time, making the most of store cupboard staples that will upgrade your cooking! I love using the air fryer to cook juicy chicken thighs. I'm using Tenderstem broccoli, but you can swap this out for broccoli or any seasonal greens that you prefer.

Ingredients

  • chicken thighs 500 g
  • ground turmeric 2 tsp
  • dried oregano 2 tsp
  • couscous 240 g
  • houmous 200 g
  • roasted red peppers 200 g (chopped)
  • Tenderstem broccoli 200 g (chopped)
  • pomegranate seeds 80 g
  • tabasco 5 ml

Method

  • Preheat the air fryer to 200°C.
  • Coat the chicken thighs in the turmeric and oregano, add a drizzle of oil. Place in the air fryer and cook for 16 - 20 minutes, check it’s cooked through. If you have a kitchen thermometer, it should be at 75°C.
  • Meanwhile, cook the couscous according to the packet instructions.
  • Chop the broccoli into small pieces. Bring a pan of salted water to the boil. Cook the broccoli in the water until just tender, around 4 - 5 minutes. Drain and set aside.
  • Chop the roasted red peppers into strips.
  • Once the chicken is cooked, assemble the bowls. Top the couscous with the chicken, hummus, pomegranate seeds, broccoli and peppers, a drizzle of olive oil and some Tabasco if you fancy some heat. Enjoy!
