These crispy cheesy chicken quesadillas are lightly spiced and served with fries. Perfect for an easy midweek dinner.

fries 450 g
olive oil 1 tbsp
sour cream to garnish
tinned sweetcorn 200 g (drained)
mild cheddar cheese 60 g (grated)
plain tortilla wraps 4
dried oregano ½ tsp
ground cumin 2 tsp
garlic granules ½ tsp
smoked paprika 1 tsp
mild chilli powder pinch
onion 1 (sliced)
chicken breast 500 g (sliced)
bell pepper 1 (sliced)
Method
Preheat the oven to 180°C/160°C fan/gas mark 4.Cook the fries according to the packet instructions.
Thinly slice the chicken, onion and bell pepper. Heat the olive oil in a frying pan over a medium-high heat. Add the chicken, onion and bell pepper to the pan and cook for around 10 minutes.
Add the chilli powder, smoked paprika, cumin, garlic granules and oregano to the pan and stir well. Continue cooking until the chicken is cooked through. Transfer from the pan.
Grate the cheese.
Add 1 wrap to the pan and top with some of the chicken and veg mixture and a sprinkling of cheese and sweetcorn. Fold the other half of the wrap over. After a few minutes flip the wrap over and cook again so that both sides are golden. Repeat to make 4 quesadillas.
Serve the quesadillas with the sour cream and fries. Enjoy!
