Cheesy Chicken Quesadillas

These crispy cheesy chicken quesadillas are lightly spiced and served with fries. Perfect for an easy midweek dinner.

Ingredients

  • fries 450 g
  • olive oil 1 tbsp
  • sour cream to garnish
  • tinned sweetcorn 200 g (drained)
  • mild cheddar cheese 60 g (grated)
  • plain tortilla wraps 4
  • dried oregano ½ tsp
  • ground cumin 2 tsp
  • garlic granules ½ tsp
  • smoked paprika 1 tsp
  • mild chilli powder pinch
  • onion 1 (sliced)
  • chicken breast 500 g (sliced)
  • bell pepper 1 (sliced)

Method

  • Preheat the oven to 180°C/160°C fan/gas mark 4.Cook the fries according to the packet instructions.
  • Thinly slice the chicken, onion and bell pepper. Heat the olive oil in a frying pan over a medium-high heat. Add the chicken, onion and bell pepper to the pan and cook for around 10 minutes.
  • Add the chilli powder, smoked paprika, cumin, garlic granules and oregano to the pan and stir well. Continue cooking until the chicken is cooked through. Transfer from the pan.
  • Grate the cheese.
  • Add 1 wrap to the pan and top with some of the chicken and veg mixture and a sprinkling of cheese and sweetcorn. Fold the other half of the wrap over. After a few minutes flip the wrap over and cook again so that both sides are golden. Repeat to make 4 quesadillas.
  • Serve the quesadillas with the sour cream and fries. Enjoy!
