Cheat's Chorizo & Leek Tortellini Bake

Take a bag of ready made tortellini and turn it into the easiest one pan bake. This recipe takes the bubbling comfort of a pasta bake and makes it weeknight easy. A base of creamy tomato leeks and chorizo, with tortellini stirred through, then baked and topped with more sizzling chorizo. For a vegetarian version simply omit the chorizo. You could also use onions or shallots instead of leeks.

Ingredients

  • leek 2 (sliced)
  • chorizo slices 80 g
  • Italian seasoning 2 tsp
  • chopped tomatoes 400 g (chopped)
  • ricotta 80 g
  • tortellini 600 g
  • Parmesan 50 g

Method

  • Preheat the oven to 200°C/Fan 180°C. Thinly slice the leeks and half the chorizo slices (keep the other half of the chorizo slices whole for finishing the dish).
  • Heat a dash oil in an ovenproof pan over a medium heat. Add the leeks, season with salt and pepper and cook for 3 minutes. Stir in the Italian seasoning, chopped tomatoes and ricotta and mix well.
  • Stir through the tortellini with 300ml water. Check the seasoning and adjust to taste. Scatter over the Parmesan and the reserved chorizo slices.
  • Bake in the oven for 15 minutes or until bubbling. Plate up and enjoy.
