Cheat's Lasagne

This clever rift on a lasagne uses ready made filled pasta to build a speedy traybake. Tortelloni layered with a quick tomato sauce, baby spinach and creamy mozzarella, all baked in one dish. We think this one will get full marks from all the family! You could also use ravioli instead of tortelloni.

Ingredients

  • roasted red peppers 150 g (drained)
  • chopped tomatoes 800 g
  • dried oregano 2 tsp
  • paprika 1 tsp
  • spinach 200 g
  • tortellini 500 g
  • grated mozzarella 100 g
  • mixed leaf salad 160 g

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6. Slice the red peppers into strips.
  • Pimp your chopped tomatoes: In a bowl mix the chopped tomatoes with the oregano, paprika and a pinch of salt and pepper. Switch it up and add your favourite spices. We also love a pinch of chilli flakes.
  • Spoon a third of the chopped tomatoes into a baking dish (approx 20x30 dish). Add a third of the spinach and red peppers and a third of the tortelloni with a scattering of the cheese.
  • Repeat this process 2 more times. Make sure the tortelloni is nestled into the sauce for the top layer. Finish with a layer of cheese.
  • Bake for 35 minutes, until the cheese is golden and bubbling. Leave to cool for a few minutes. Plate up and serve with the mixed salad. Enjoy!
