Cheat's Prawn Nasi Goreng

This dish is punchy and packed full of some beautiful Indonesian flavours. My version uses pouches of microwave rice for ultimate ease and convenience. You could also use leftover rice. Note - you will need a blender for this recipe.

Ingredients

  • mixed chillies to taste (sliced)
  • spring onions 3 (sliced)
  • fresh coriander 1 handful (chopped)
  • basmati microwave rice 500 g
  • garlic paste 1 tbsp
  • brown sugar to taste
  • soy sauce 3 tbsp
  • tomato purée 1 tbsp
  • frozen prawns 200 g
  • salted peanuts 50 g
  • egg 4
  • vegetable oil dash

Method

  • Roughly chop the fresh chilli - use as little or as much as you like depending on how hot you like it! Thinly slice the spring onions and chop the coriander leaves and stalks.
  • Make the spice paste. In a blender, blitz together the garlic, mixed chilli, tomato puree, soy sauce and a pinch of brown sugar.
  • Heat a dash of oil in a pan on a medium heat and add the microwave rice or leftover rice. If you're using microwave rice there's no need to cook it first. Add the spice paste and cook the rice for a few minutes stirring well.
  • Stir in the prawns and cook for a few minutes, adding a dash of water to the pan if needed. Scatter in the spring onions and coriander and cook for a couple of minutes.
  • Meanwhile, fry the eggs in a bit of oil just the way you like them.
  • Plate up the rice and prawns in bowls. Pop a fried egg on top of each bowl and scatter with the peanuts. Enjoy!
