Caprese Style Pasta With Buttery Panko

Inspired by a classic Italian combo for an easy dinner. Pasta packed with fresh tomatoes, fragrant basil and creamy mozzarella. Made extra special by using buttery oregano breadcrumbs to add gorgeous texture and flavour.

Ingredients

  • orecchiette 300 g
  • cherry tomatoes 200 g (quartered)
  • mozzarella cheese ball 250 g (torn)
  • fresh basil 1 handful (chopped)
  • butter 1 tbsp
  • panko breadcrumbs 2 tbsp
  • dried oregano 1 tsp
  • mixed leaf salad 50 g

Method

Cook the pasta & prep the ingredients

  • Cook the pasta according to the packet instructions.
  • Quarter the cherry tomatoes. Chop the basil. Drain and tear the mozzarella into small pieces.

Make the buttery oregano panko

  • Heat a small frying pan over a medium heat. Add the butter and let it melt, once the butter starts to foam, add the breadcrumbs and oregano and gently fry for 3-4 minutes until the breadcrumbs are golden.

Assemble the dish

  • In a large bowl combine the cooked pasta, tomatoes, basil, mixed lead salad and mozzarella. Dress with some olive oil and season to taste with salt and pepper.
  • Serve the pasta topped with the buttery oregano breadcrumbs. Enjoy!
