Caprese Pasta Salad

This is a perfect summer dinner that comes together in no time. Use the tomatoes when they're in peak season for the best flavour. The addition of avocado and pesto adds a rich creaminess. Any leftovers are perfect for lunch.

Ingredients

  • penne pasta 300 g
  • cherry tomatoes 300 g (halved)
  • avocado 1 ½ (chopped)
  • mozzarella cheese ball 125 g (torn)
  • green pesto 4 tbsp
  • fresh basil 1 handful (leaves picked)

Method

  • Cook the pasta according to the packet instructions.
  • Meanwhile, slice the tomatoes in half. De-stone the avocado, scoop out the flesh and chop it into small pieces. Tear the mozzarella into small pieces. Pick the basil leaves.
  • In a large bowl combine the pasta, tomatoes, avocado, mozzarella, pesto and a dash of oil (we like to use olive oil, use your preferred oil. Check the seasoning and adjust to taste.
  • Plate up and garnish with the basil leaves. Enjoy!
