BLT Gnocchi

This is a speedy one pan dinner with only 5 ingredients and ready in 20 minutes. BLT but make it gnocchi! The flavours of the classic sandwich are adapted in this clever recipe, bursting with crispy bacon, tomatoes and rocket instead of lettuce. You could also substitute baby spinach for the rocket if preferred. Pan-frying gnocchi is a great kitchen hack, giving you a crispy outside and chewy in the middle.

Ingredients

  • gnocchi 800 g
  • smoked bacon lardons 200 g
  • cherry tomatoes 400 g (halved)
  • grated Parmesan 70 g
  • rocket 1

Method

Cook the gnocchi

  • Heat a dash of oil in a large frying pan on a medium-high heat. Add the gnocchi and cook them for 5 - 7 minutes, until golden brown. Transfer from the pan and set aside.

Make the sauce

  • In the same pan, cook the bacon lardons on a medium heat until crispy (no need to add extra oil as they will release fat when cooking). While the lardons are cooking, slice the tomatoes in half.
  • Remove the lardons from the pan. Add the tomatoes to the pan, tossing to coat them in the fat released by the lardons. Add a splash of water and cook for around 5 minutes, scraping the bottom of the pan to incorporate all the flavour. Squish the tomatoes with the back of a spoon to break them down.

Add the gnocchi to the sauce

  • Add the gnocchi back into the pan. Stir in the Parmesan (keep some aside for serving) along with another splash of water and stir vigorously. Check the seasoning and adjust to how you like it. Stir through the rocket and mix well.

Plate Up

  • Scatter with the reserved Parmesan then plate up and enjoy!
