Bhaji Burgers

This is my take on the Indian bhaji, which is a vegetable fritter fried in a light gram (chickpea) flour batter. My version uses courgette and red onion, spiced with paprika, coriander and chilli flakes. You can adjust the spice levels depending on how you like it.Served on gluten free rolls with sweet potato chips, this one's sure to be a family favourite!

Ingredients

  • sweet potato 4 (sliced)
  • courgette 2 (grated)
  • red onion 1 (sliced)
  • tomatoes 1 (sliced)
  • iceberg lettuce 200 g (chopped)
  • lime 1 (juice)
  • ground coriander 2 tsp
  • paprika 2 tsp
  • chilli flakes 1 tsp
  • chickpea flour 75 g
  • sunflower oil 300 ml
  • gluten free rolls 4
  • vegan cheese slices ½

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6. Slice the sweet potatoes (no need to peel) into chips. On a baking tray drizzle them with olive oil and season with salt and pepper. Cook for 30 minutes, until golden and cooked through.
  • Meanwhile, coarsely grate the courgette and sprinkle with a pinch of salt. Leave to drain over a colander. Thinly slice the red onion. Slice the tomato and chop the lettuce. Juice the lime.
  • Squeeze any excess liquid from the courgette. In a large bowl, add the courgette, red onion, coriander, paprika, chilli flakes and gram flour . Pour in the lime juice with 1/2 a tablespoon water per serving. Season with salt and pepper.
  • Mix well until combined. With your hands, shape the mix into bhaji burgers, one per serving.
  • Pop the bhaji burgers in the fridge. Heat around 2cm sunflower oil in a small deep pan, on a medium-high heat. Test if the oil is hot by dropping a breadcrumb in it, if it sizzles and turns golden brown straight away it's ready. If you prefer you can shallow fry, but they won't be as crispy.
  • Carefully lower the bhaji burgers, 2 at a time, into the pan and fry for around 3 minutes until golden and crispy. Remove from the pan and drain on kitchen paper.
  • Layer the gluten free rolls with the lettuce, sliced tomato, bhaji and the vegan cheese. Add your favourite sauce, these are great with tzatziki too. Serve with the sweet potato chips and enjoy!
