Instant Pot Aromatic Indian Lamb Saag

Ingredients

  • onion 1 (chopped)
  • garlic cloves 2 (chopped)
  • ginger 10 g (chopped)
  • tomatoes 4 (chopped)
  • fresh coriander 1 handful (chopped)
  • coriander seeds 1 tsp
  • cardamom pods 2
  • ground turmeric 1 tsp
  • cumin seeds 1 tsp
  • spinach 200 g
  • lamb mince 400 g
  • basmati rice 240 g

Method

  • Roughly chop the onion, ginger, garlic and coriander.
  • Press the SAUTE button on the Instant Pot, then add the cumin seeds and coriander seeds in. Once you can smell the aroma from the spices, transfer to a food processor with the onion, ginger, garlic and coriander and blend to a paste.
  • Add a dash of oil to the Instant pot. Once melted, add the paste from the food processor and stir for about 3 minutes. Stir in the lamb and brown all over.
  • Meanwhile, quarter the tomatoes.
  • Add the tomatoes, cardamom pods and turmeric with a pinch of salt and stir. Add 25ml water per serving. Secure the lid in place and set to MEAT/STEW for 35 minutes. At the end of cooking use the NPR method.
  • Meanwhile, cook the rice according to the packet instructions.
  • Stir the baby spinach into the Instant Pot just before serving and cook until it wilts down. Plate up the lamb saag with the rice. Enjoy!
