Alberti’s Figtastic Summer Salad

Ingredients

  • red onion 1 (sliced)
  • fresh basil 1 handful (leaves picked)
  • cherry tomatoes 200 g (sliced)
  • rocket 250 g
  • fresh fig 5 (sliced)
  • walnut halves 100 g (crushed)
  • extra-virgin olive oil 2 tbsp
  • gorgonzola piccante cheese 2 tbsp (crumbled)
  • balsamic vinegar 1 tbsp

Method

  • Thinly slice the red onion. Cut the cherry tomatoes in half and sprinkle with a little salt to help bring out their flavour. Pick the basil leaves.
  • Add the red onion, cherry tomatoes, rocket and basil to a serving bowl. Drizzle with the extra virgin olive oil and balsamic vinegar. Season with salt and pepper. Gently toss together.
  • Top with the fresh figs cut into quarters. Crumble the gorgonzola and walnuts on top.
  • To finish, drizzle a little extra virgin olive oil on top. Buon Appetito!
