Air Fryer Chicken Fajitas

These fajitas are a firm favourite in our house. They come together in no time and can be customised with your favourite vegetables and toppings. If you prefer a veggie version, you can swap the chicken for tofu.

Ingredients

  • bell pepper 2 (sliced)
  • red onion 1 (sliced)
  • avocado 1 ½ (sliced)
  • chicken breast 640 g (chopped)
  • fajita seasoning 3 tbsp
  • gluten free tortilla 160 g
  • lime to serve (juice)
  • salsa to serve

Method

  • Thinly slice the peppers. Peel and thinly slice the red onion. De-stone and slice the avocado. Thinly slice the chicken.
  • In a large bowl, combine the chicken and vegetables with the fajita seasoning, a dash of olive oil and season with salt and pepper
  • Spread the chicken and vegetables evenly across the air fryer basket and air fry for 12 minutes at 200°C, tossing half way through. Make sure the chicken is cooked through before serving (internal temperature of 75°C).
  • Warm the tortilla wraps as per packet instructions. Juice the lime.
  • Plate up - load up the tortilla wraps with the chicken and vegetables, salsa, avocado and lime juice to taste.
