Air Fryer Chilli Jam Chicken Meatballs & Noodles

Ingredients

  • spring onions 4 (sliced)
  • bell pepper 1 (sliced)
  • red onion 1 (sliced)
  • chicken mince 500 g
  • sweet chilli jam 4 tbsp
  • panko breadcrumbs 50 g
  • straight to wok noodles 600 g
  • sesame oil 2 tbsp
  • soy sauce 1 tbsp

Method

Prep the ingredients

  • Thinly slice the spring onions, bell pepper and red onion.

Make the meatballs

  • In a bowl mix together the chicken mince with half the chopped spring onions and half the chilli jam and the breadcrumbs. Using wet hands, shape into meatballs, 3 per person.

Let’s cook

  • Cook the meatballs in the air fryer at 180C for 10 minutes.
  • Meanwhile, in a bowl mix together the noodles with the sesame oil, soy sauce, red onion and pepper. If the noodles you have need to be cooked first, cook them according to the packet instructions.
  • After the meatballs have been cooking for 10 minutes, layer the noodles and veg under the meatballs. Brush the meatballs with the rest of the chilli jam and cook for a further 10 minutes, until the meatballs are cooked through.

Plate Up

  • Plate up and enjoy!
