Fragrant Red Thai Dumpling Soup

I love frozen dumplings (gyoza), whatever you want to call them, they make a great snack or bulked up to make a great meal. Always handy to keep a packet in the freezer. This comes together in no time, with the red Thai curry paste adding instant flavour, paired with your favourite greens - I'm using spinach but you swap this for kale, shredded cabbage or green beans. Truly dinner made easy!

Ingredients

  • red Thai curry paste 50 g
  • coconut milk 800 ml
  • fish sauce 20 ml
  • tabasco 10 ml
  • vegetable gyoza dumplings 270 g
  • spinach 120 g
  • egg 4 (fried)
  • sesame oil to serve

Method

Prepare the broth

  • In a pan, over a medium heat, fry off your red Thai curry paste for a couple of minutes to release all its delicious flavour then pour in the coconut milk.
  • Simmer this mix for a couple of minutes to let the flavours infuse.
  • Have a taste of the sauce and balance with fish sauce (which adds salty/tang) and some tabasco (heat/acidity), when you are happy drop in the vegetable gyoza and spinach for cook for 5 mins.

Cook the eggs

  • When you are ready to serve, fry the eggs until nice and crispy, according to how you like them.

To serve

  • Plate up the soup into bowls and top each one with an egg and a drizzle of sesame oil and get stuck in.
