One Tray Pizza Chicken

Part of our one pot chicken dinners - easy chicken dinners made in one pot or tray. An easy chicken traybake combining two of our favourites - pizza and chicken! We love a chicken bake and have given it the pizza treatment. Chicken layered in a herby tomato with potatoes and veggies, topped with pepperoni and mozzarella.

Ingredients

  • tinned new potatoes 540 g (sliced)
  • red onion 1 (sliced)
  • chicken breast 4
  • tinned sweetcorn 200 g (drained)
  • tomato passata 500 g
  • dried oregano ½ tbsp
  • mozzarella cheese ball 125 g (torn)
  • pepperoni 80 g
  • fresh basil to garnish (torn)

Method

Prep & preheat the oven

  • Preheat the oven to 220°C/200°C fan.
  • Slice the potatoes in half. If you don't have tinned potatoes, then simply boil your potatoes in salted water until tender, around 10 minutes, then slice and use the same way as you would the tinned potatoes. You can also use a pack of pre-cooked potatoes. Cut the red onion into wedges.

Assemble the traybake

  • Add the potatoes, red onion and sweetcorn to a large baking dish and toss together with the passata and half the dried oregano. Season well with salt and pepper.
  • Layer the chicken breasts on top of the vegetables, then scatter over the pepperoni. Tear the mozzarella into strips then scatter it on top with the rest of the dried oregano. Drizzle the top of the chicken with a dash of olive oil.

Bake the traybake & plate up

  • Bake in the oven for 25 minutes, until the chicken is cooked through and the cheese has melted.
  • Scatter the basil leaves on top then plate up and enjoy!
