Slow Cooker Smoky Harissa Lamb & Chickpea Stew

Mince meat is a great ingredient to use in easy family dinners. It's a tasty, familiar ingredient this is a great way to use it outside of classic dishes like spaghetti bolognese and chilli. This recipe is also brilliant for batch cooking.

Ingredients

  • lamb mince 400 g
  • onion 1 (diced)
  • bell pepper 1 (diced)
  • tomato purée 1 tbsp
  • dried oregano 1 tsp
  • ground cumin 1 tsp
  • smoked paprika 1 tsp
  • garlic cloves 2 (crushed)
  • ginger 15 g (grated)
  • chicken stock cube 1
  • chickpeas 400 g (drained)
  • harissa paste 1 tsp
  • chopped tomatoes 400 g
  • sugar pinch
  • couscous 200 g

Method

  • Dice the onion and bell pepper. Crush the garlic cloves.
  • Add the lamb mince, onion, bell pepper and all other ingredients except the cous cous to the slow cooker pot. Give it a good stir to mix everything together. Pop the lid on and cook on low for 8 hours or on high for 4 hours.
  • Once the stew is nearly done, cook the cous cous according to the packet instructions.
  • Add a pinch of sugar or honey to sweeten the stew, depending on how you like it. Serve up with the cous cous and enjoy!
