Air Fryer Mediterranean Turkey Meatballs

Turkey mince is such a versatile, affordable, protein-packed ingredient. Here it’s used to create tender meatballs wrapped in a flavoursome creamy sauce. Customise your flatbreads however you like - I love them with olives, tomatoes and tzatziki. Ingredients

  • turkey mince 500 g
  • feta 200 g (crumbled)
  • tomato purée 1 tbsp
  • cherry tomatoes 250 g (sliced)
  • dried oregano 1 tsp
  • garlic powder 1 tsp
  • folded flatbreads 4
  • black olives to serve
  • tzatziki dip to serve

Method

  • Preheat the air fryer to 180ºC.
  • In a bowl, combine the turkey mince, feta, tomato purée, oregano, garlic powder and season with salt and pepper. Shape the mince mix into small meatballs, you should have around 4 meatballs per serving. Place in a heatproof dish that fits in your air fryer.
  • Place the dish in the air fryer and cook for 12 minutes, turning once during cooking. Check the internal temperature of the meatballs has reached 75ºC using a food thermometer.
  • Meanwhile, heat the flatbreads as per the packet instructions. Slice the tomatoes.
  • Assemble your flatbreads, layer with the tzatziki and meatballs, then top with the tomatoes and olives. Enjoy!
