Instant Pot Mediterranean Chicken & Prosciutto Rice Salad

Ingredients

  • artichokes 200 g (drained)
  • prosciutto crudo 60 g (torn)
  • chicken breast 2
  • basmati rice 240 g
  • tomatoes 4 (chopped)
  • chicken stock cube 1
  • garlic cloves 2 (chopped)
  • smoked paprika 2 tsp
  • green beans 80 g
  • olive oil 1 tbsp
  • onion 1 (chopped)
  • green olives 1 handful

Method

  • Press the SAUTE button on the Instant Pot and add the oil. Meanwhile, chop the onion and garlic. When hot, add the onion and garlic and stir constantly for about 4 minutes.
  • Meanwhile, quarter the tomatoes and thinly slice the chicken breast.
  • Add the smoked paprika, salt, tomatoes, chicken breasts and green beans to the pot, then stir.
  • Stir in the rice, then add 60ml water per serving and the chicken stock cube. Secure the lid in place and set to RICE (or low pressure) for 12 minutes. At the end of cooking, use the QPR method.
  • Meanwhile, roughly tear the Prosciutto. When the rice and chicken are cooked stir in the olives and artichokes and top with the Prosciutto**. Plate up and enjoy!
