Slow Cooker Korean Beef Noodles

If you've never had Gochujang before, this is your opportunity. It's a Korean chilli paste that really packs a punch. The paste adds a depth of flavor and spice to the dish, while the slow cooker ensures that the meat is tender. This recipe is a great way to introduce yourself to Korean cuisine.

Ingredients

  • onion 1 (sliced)
  • garlic cloves 3 (crushed)
  • ginger 15 g (grated)
  • gochujang 2 tbsp
  • brown sugar 15 g
  • soy sauce 2 tbsp
  • beef stock cube 1
  • diced beef 400 g
  • udon noodles 600 g
  • fresh coriander 1 handful (chopped)

Method

  • Slice the onion. Crush the garlic. Peel and grate the ginger. Prepare the beef stock cube with 25ml boiling water per person.
  • Add all the ingredients to the slow cooker pot, apart from the udon noodles, beef and coriander. Stir all the ingredients in the pot together to make a sauce. Tip the beef into the pot and mix until it is all coated. Pop the lid on top and cook on low for 8 hours.
  • Cook the udon noodles according to the packet instructions. Roughly chop the coriander leaves and stalks.
  • Plate up the noodles with the Korean beef on top. Sprinkle with the fresh coriander. Enjoy!
