Hot Honey Halloumi Wraps

Dinner on the table in 25 minutes! Hot honey halloumi wraps loaded with all the veggies (bell pepper, courgette, sweetcorn and pickled red onions). Adapt this recipe to use up any leftover veg you may have.

Ingredients

  • red onion ½ (sliced)
  • bell pepper 1 (sliced)
  • courgette 1 (sliced)
  • halloumi 225 g (sliced)
  • honey 2 tbsp
  • sweet chilli sauce 4 tbsp
  • Greek yoghurt 4 tbsp
  • red wine vinegar 2 tbsp
  • sugar pinch
  • mixed leaf salad 1 handful
  • plain tortilla wraps 4
  • tinned sweetcorn 150 g

Method

Prep the vegetables

  • Thinly slice the red onion, bell pepper and courgette. Slice the halloumi into thick slices.

Make the hot honey sauce

  • Make the hot honey sauce by mixing together the honey and sweet chilli sauce.

Pickle the red onion

  • Add the red onion to a small bowl, sprinkle with the red wine vinegar and add a pinch of sugar then scrunch up with your fingers. Set aside until you’re building your wraps.

Cook the vegetables and halloumi

  • Heat a dash of oil in a pan on a medium-high heat. Cook the bell pepper,courgette and sweetcorn for a few minutes, with a pinch of salt and pepper then transfer from the pan.
  • Add the halloumi to the same pan and cook until just golden brown on each side (add another dash of oil if needed). Pour over most of the hot honey sauce and glaze the halloumi with it.

Wrap it up!

  • Heat the tortilla wraps according to the packet instructions.
  • Build your wraps however you like them. We start with a layer of Greek yoghurt, salad leaves then top with the veggies and halloumi before drizzling over the rest of the hot honey sauce. Finish with the pickled red onions. Enjoy!
