Slow Cooker Hoisin Garlic Chicken Noodles

This is a flavour packed Asian inspired noodle dish. It's ideal to make in the slow cooker, as the chicken is gently braised until it is beautifully tender in an aromatic and glossy sauce.

Ingredients

  • chicken thighs 500 g
  • onion 1 (sliced)
  • hoisin sauce 3 tbsp
  • soy sauce 5 ml
  • garlic cloves 2 (crushed)
  • crispy chilli oil 1 tsp
  • chicken stock cube 1 (crumbled)
  • dried noodles 300 g
  • sesame seeds 1 tbsp
  • fresh coriander 1 handful (chopped)
  • honey 1 tsp

Method

  • Thinly slice the onion. Crush the garlic.
  • Place the chicken, onion, garlic, hoisin sauce, soy sauce, chilli oil, chicken stock cube and honey into your slow cooker pot and stir to combine. Pour in 100ml water per serving.
  • Pop the lid on the slow cooker then cook on the low setting for eight hours or on the high setting for 4 hours.
  • Cook the noodles according to the packet instructions. Roughly chop the coriander leaves and stalks. Toast the sesame seeds in a small, dry pan.
  • When the slow cooker is finished, use 2 forks to shred the chicken. Stir through the noodles.
  • Scatter the coriander and sesame seeds on top and serve. Enjoy!
