Greek Style Beans

A one pan dinner that will be a winner with the whole family. Fragrant oregano and warming paprika, creamy beans and salty feta are the perfect midweek pick me up! Make it your own by adding more vegetables, olives and switching up the beans. Serve with ciabatta rolls or flatbreads.

Ingredients

  • red onion 1 (diced)
  • carrot 1 (diced)
  • bell pepper 1 (diced)
  • dried oregano 1 tsp
  • paprika 1 tsp
  • butter beans 800 g
  • chopped tomatoes 400 g
  • ciabatta roll 4
  • feta 100 g (crumbled)
  • fresh dill 1 handful

Method

Prep the ingredients

  • Peel and dice the red onion. Dice the carrot. Deseed and dice the bell pepper.

Cook the dish

  • Heat a dash of oil in a frying pan over a medium heat. Add the red onions and fry for 6-7 minutes, add the carrots and bell pepper and cook for another 5 minutes.
  • Add the oregano and paprika, fry for 1 minute. Stir in the beans and chopped tomatoes, season to taste and leave to simmer for 5 minutes.

Plate Up

  • Serve the Greek Style Beans with ciabatta rolls. Crumble over the feta with the dill. Enjoy!
