Easy Za'atar Tomato Tart

We think this is one of the easiest tarts you will make. The tomatoes are a hero ingredient here, making this dish even more delicious when they are in peak season. This recipe uses cherry tomatoes for ease, you can also try to get different coloured tomatoes, depending on your supermarket. Ready made pastry is a brilliant ingredient to have on standby in your freezer to whip this up in no time!

Ingredients

  • cherry tomatoes 300 g (halved)
  • shortcrust pastry 320 g
  • green pesto 4 tbsp
  • mixed leaf salad 200 g
  • za'atar 2 tsp

Method

  • Preheat the oven to 200°C/180°C fan. Slice the tomatoes in half.
  • Unroll the pastry sheet and lay it on a baking tray, on the paper it comes in.
  • Spread out the pesto in the middle of the pastry sheet then layer the tomatoes on top and sprinkle over half the za'atar. Leave a 1- 2 cm pastry border around the edge.
  • Fold the exposed pastry border over on itself so it just touches the tomatoes. Don't worry about it being even or neat - the beauty is that it doesn't need to be!
  • Brush the pastry edges with a little oil and sprinkle with the remaining za'atar. Bake in the oven for 20 - 25 minutes, until the pastry is golden.
  • Cut the tart into slices and serve with the mixed leaf salad. Enjoy!
