Air Fryer Mediterranean Gnocchi

Baking a pack of shop bought gnocchi is a great way to cook it for an easy traybake dinner. Most supermarkets sell packets of mixed Mediterranean-style vegetables in the frozen section, if you can’t find a ready made veg mix, simply use bell peppers, courgettes and red onion. Ingredients

  • mozzarella cheese ball 125 g (torn)
  • chargrilled vegetables 500 g
  • tomato pasta sauce 350 g
  • gnocchi 1 kg
  • green pesto 2 tbsp
  • fresh basil 1 handful (torn)

Method

  • Preheat the air fryer to 160ºC.
  • Tear the mozzarella into small pieces.
  • Combine the vegetables, tomato sauce, gnocchi, and pesto in a heatproof dish that fits in your air fryer. You may need to split this into two containers depending on the size of your air fryer. Stir well so that all the gnocchi are evenly coated.
  • Place the dish in the air fryer and cook for 20 minutes, stirring occasionally.
  • Scatter the torn mozzarella over the top of the dish and cook for a further 10 minutes.
  • Top with the basil then plate up and enjoy!
